Method

    To a pan, add 400g washed uncooked white rice, 150g tomato purée, 150g tomato paste, 750ml beef broth, 4 diced garlic cloves, 1.5 Tsp chicken stock powder, 1 Tsp black pepper, 1 Tsp onion powder, and 0.5 Tsp cumin.

    Mix all ingredients well, then simmer on low heat with a lid for 20-25 minutes, or until the rice is cooked through.

    Once the rice is cooked, add a handful of cilantro/coriander and the juice of half a lime. Fluff with a fork and mix well.

    In another pan, brown 1.5KG extra lean beef mince with 0.5 diced brown onion.

    To assemble each burrito, take one warm low carb tortilla. Equally distribute approximately 40g of the cooked rice onto the tortilla.

    Add 35g nacho cheese sauce, 45g low fat yoghurt, and 30g light sriracha mayonnaise.

    Equally distribute approximately 150g of the cooked beef mince, then add more cilantro/coriander to taste.

    Roll the tortilla tightly into a burrito.

    Heat a pan on low heat. Place 25g of light grated cheese onto the pan, then immediately place a rolled burrito on top of the melting cheese to seal it.

    Cook for 2-4 minutes until the cheese is golden brown and crispy. Repeat this process for the remaining 9 burritos.
